In 2014, Osteria 16 opened in Vesterbro, Copenhagen, founded by chef Morten Kaltoft and artist Emil Alsbo. Here, it’s all about honest Italian food served family style, with dishes shared around the table. No snobbery—just great food, few ingredients and plenty of flavour. Osteria 16 – Cookbook contains 80 simple and original Italian recipes divided into antipasti, polenta, pasta, risotto, pizza, bread, desserts and classic Italian basic recipes. The starting point is seasonal produce and high-quality ingredients, allowing each individual flavour to shine through. Among other things, the book features raw-marinated langoustine tails with anchovy and chilli sauce, linguine with sea urchin, risotto with radicchio and red wine, as well as lemon tart with meringue. Emil Alsbo’s atmospheric photographs show the dishes, the restaurant and the classic Italian market ambience. The result is a down-to-earth cookbook and visual diary from one of Copenhagen’s popular Italian restaurants.
